My mom and I went to Hatch, the small town in New Mexico where my mom grew up and my grandparents still live. Naturally, while we were there, we had to go eat some Mexican food. Mexican food is always better in New Mexico. I think it’s because that’s where the Chile is grown, but I may be a little biased because my grandparent’s are Chile farmers. My cousin runs the store The Hatch Chile Store… so yeah, I’m definitely biased. But for good reason, it really is the best! I always love getting to see family!! It was a treat getting to spend time with my mom and get to see my grandparents!
